Organic Girl Greens Fresh From Nature's Garden

This recipe features the convenience of Organic Girl Greens, now available from Nature’s Garden. Organic Girl 50/50 mix is perfect for salads, especially because they wash the greens 3 times before packaging, saving you some prep time. Pair the greens with some Capra Gia Feta Cheese, fresh tomato, and your favorite vinaigrette and you have the perfect accompaniment to for any meal.


Simple Green Salad


2 cups Organic Girl 50/50 mix
1 cup Organic Cherry Tomatoes, quartered
⅓ cup Capra Gia Feta Cheese
¼ cup Basic White Balsamic Vinaigrette (recipe follows)
salt and pepper to taste


Place the greens in a bowl and add half of the tomatoes and cheese. Season with salt and pepper, then add the vinaigrette and toss with the dressing to combine. Place salad into serving bowls and garnish with the remaining tomatoes and cheese. Drizzle with additional vinaigrette if desired.
Basic White Balsamic Vinaigrette
¼ cup white balsamic vinegar
¾ cup extra virgin olive oil
1 tsp dijon mustard
½ tsp each salt and pepper (plus more to taste)


Whisk together the vinegar, mustard, honey, salt, and pepper. Slowly add oil in a steady stream, mixing it into the vinegar mixture constantly. Use immediately or pour into a container and cover. Will keep refrigerated for 7 days.

Organic Roasted Baby Carrots From Nature’s Garden

1 lb package organic baby carrots
3 tbl olive oil
½ cup onion, halved and thinly sliced
2 tsp fresh thyme leaves plus additional thyme sprigs for garnish
salt and pepper to taste

Preheat oven to 375 degrees. In a mixing bowl, combine the carrots and olive oil, tossing to coat. Add 2 tsp fresh thyme and season with salt and pepper. Mix well, then spread evenly onto a parchment lined sheet tray, making sure not to crowd the pan. Roast until the carrots are lightly caramelized and tender, about 30-40 minutes. Remove from oven and allow to cool slightly. Move the carrots onto a serving dish and garnish with additional thyme sprigs if desired.
