Cucumber Corn Salsa Recipe


This recipe is healthy, delicious, and can be served in a variety of ways! Loaded with organic vegetables and bursting with fresh summer flavors, this salsa can be enjoyed over a bed of greens, on top of fish or chicken, or eaten simply with your favorite tortilla chips. Cucumber and Corn Salsa

2 ears corn cut away from the cob
1 cucumber cut into bite sized chunks
3 tomatoes, cut into bite sized chunks
2 avocados, peeled, pitted, and diced
1/2 cup Vidalia sweet onion, diced
1/2 cup cilantro, chopped
1 small jalapeno pepper, seeded and diced (Optional)
1-2 cup to 1 cup of Italian salad dressing, to taste
salt and pepper

Prepare all of the vegetables and place into a mixing bowl. Season with salt and pepper, then mix in 1/2 cup of the Italian dressing and the cilantro. Adjust the amount of dressing and seasonings to taste. Garnish with additional cilantro if desired. Enjoy!
